Salad Dressing Recipes

If you don't want to spoil the flavor of our fresh picked lettuce, with a store bought salad dressing, try one of these. I have been making Lemon Tahini dressing, for years.  It is one of my  favorites.  I tried the version, made with sesame seeds rather than Tahini paste, and it was delicious also!!

At the very bottom of the page is a wonderful recipe for the fresh tomatoes we will soon be enjoying.

Salad dressings
Strawberry Vinaigrette 
Ingredients
1 cup olive oil (Light flavored) or canola oil
1/2 pint fresh strawberries, halved
2 tablespoons balsamic vinegar
1/2 teaspoon sea salt
1/4 teaspoon ground black pepper
1/4 teaspoon dried tarragon
1/4 teaspoon white sugar

PREPARATION:
In a blender or food processor, mix olive oil, strawberries, balsamic vinegar, sea salt, pepper, tarragon and sugar. Blend until smooth. 

GARLIKY VINAIGRETTE 
INGREDIENTS
1/3 c. red wine vinegar (You may use Balsamic, Seasoned Rice Wine or Champagne)
4 cloves garlic
2 T. Dijon mustard
2 T. honey (I prefer Agave)
1/2 - 2/3 c olive oil (I lean towards less)
1 T. chopped basil (fresh)
1 t. chopped fresh dill (fresh)
1/2 t. chopped oregano (fresh)
1/4 c. sour cream or plain yogurt  
PREPARATION:
Add the first 8 ingredients to jar or bowl and shake or whisk.  Add olive oil (slowly if whisking in bowl, all in and shake if using jar).  If using sour cream or yogurt, add in and whisk or shake again.

SESAME SEED DRESSING 
INGREDIENTS
1/2 cup sesame seeds
1/4 to 1/2 cup water
2-3 cloves of roasted garlic
1 T cumin
juice of one lemon
sea salt
PREPARATION:
Whisk water, roasted garlic, lemon juice, cumin and sea salt in a small bowl until smooth, add sesame seeds, whisk again.

LEMON TAHINI DRESSING 
INGREDIENTS
½ T Tahini paste
½ T water
3 T lemon juice
1 tablespoon Tamari sauce
3-4 small cloves garlic, minced
1/2 t Sea salt
¼ t Black Pepper
1/8 teaspoon cayenne pepper (optional)
PREPARATION:
Whisk lemon juice, water, Tahini, garlic, salt and cayenne in a small bowl until smooth.

AVOCADO VINAIGRETTE
INGREDIENTS
1 cup red wine vinegar
1 t Dijon mustard
2 T minced Florida onion
2 cups olive oil
1 t sugar
1 Florida avocado, finely chopped
1 teaspoon Sea salt
1/2 teaspoon white pepper
PREPARATION:
In a small mixing bowl, mix together vinegar and mustard until smoothly blended.
Add the sugar and, while whisking, drizzle in olive oil until emulsified.
Add avocado, onion, salt, and pepper to taste.

SALADS
Tomato with goat cheese and fresh basil or tarragon salad
INGREDIENTS
4 large garden tomatoes (if possible)
4 oz. crumbled goat cheese, or any leftover goat cheese on hand
3 tablespoons olive oil
½ cup fresh basil or tarragon, finely snipped
Sea salt and pepper to taste
PREPARATION:
Cut tomatoes into small wedges, add to salad bowl. Crumble in cheese, drizzle with olive oil, salt, pepper and fresh basil or tarragon. Toss gently. Chill until ready to serve. Toss again before serving.
